Here is a special collaboration between myself and some incredibly talented blacksmiths from Seki, Japan—an area renowned for producing some of the finest kitchen cutlery in the world. While I designed the blades, they were forged by hand in Japan, and the final construction and finishing touches were completed here in my Chicago shop.
Together, we've created two distinct Wa Gyuto styles: One San Mai style made from White II steel, and the other made from White I Damascus with a highly figured random pattern. Our goal was to offer high-quality, unique knives at an affordable price point.
